Servings: For 10–12 servings (two cakes of 8″ x 8″)
Ingredients:
1) 2 cups Sweet rice power (You can buy this product at the Asian market.)
2) 1 cup Sugar
3) 3 Eggs
4) 1 ½ stick Butter (melt before mixing)
5) 1 ½ cup Milk
6) 1 tbsp Baking powder
7) 1 tsp Vanilla extract
* Recommend electric mixer
Direction:
Mix all of the ingredients in a big bowl well. It is easy to mix together if you use an electric mixer.
Pour the mix into the bakewares.
Bake in preheated oven at 350 °F (175 °C) for 45 minutes.
Kids like to garnish with powder sugar, sweetened condensed milk, M&M’s, and chocolate chips on the top.
Servings: for 10 servings
Ingredients:
1) 8 cups Flour (sifted)
2) 2 cups Sugar
3) 1 dozen (12) Eggs
4) 1 cup Crisco (a brand of shortening)
5) 2 sticks Butter (no need to melt)
6) 2 tbsp Vanilla extract
7) 8 tsp Baking powder
Direction:
Mix flour and baking powder, and sift into a mound.
Add butter and Crisco, and cut into the mound with fork.
Mix with hands till its corn meal consistency.
Add sugar to mixture in the mound and mix well.
Make a well in middle of mound, and put the egg and the vanilla (Start with 10 eggs).
The dough should not be dry.
Form loaves about 2 or 3 inches wide (not more or they won’t cook right).
Put loaves end to end on a cookie sheet.
Bake in preheated oven at 375 °F (188 °C) for 20 minutes.
Slice while hot on a cutting board.
They have to be put in the oven after cutting.
They should not be browned or split when done.
Servings: for 6 servings
Ingredients:
1) 6 oz Pasta noodles (You may use long or short pasta. e.g., Linguine, Fettuccine, Penne, Macaroni)
2) 1 lb Ground beef (You may use chopped meatballs or sausage.)
3) 2 tbsp Butter
4) 2 Eggs
5) ¼ cup Parmesan cheese
6) 1 cup Cottage cheese
7) ½ cup Chopped onion
8) ½ cup Chopped green pepper
9) 8 oz Chopped tomato (You may use the can type of tomato.)
10) 6 oz Tomato paste (You may use spaghetti/pasta sauce.)
11) 1 tsp Sugar
12) 1 tsp Garlic salt
13) 1 tsp Dried oregano
14) 1 cup Mozzarella cheese
Direction:
Prepare cooked noodle and ground beef.
Mixing item 1–5 first, and add 6–13 and pour the mix into a bakeware.
Bake in a preheated oven at 350 °F (175 °C) for 40 minutes.
Add the mozzarella cheese on the top.
Bake for 5 more minutes.
Cool down for 5 minutes before serving.
Servings: Two Cheese Cakes for 12–14 servings
Ingredients:
1) 16 oz (two 8 oz) Cream cheese
2) 1 cup Sugar (You may add more sugar if you really like sweet taste.)
3) 2 tbsp Flour
4) 1 tsp Vanilla extract
5) 3 Eggs
6) 8 oz Sour cream
7) ¼ cup Milk
8) 2 Graham cracker pie crust (You may just use a Pyrex bakeware if you don’t like the crust or can’t buy/make it.)
Direction:
Mixing well item 1–4 first, and add 5–7. If you use an electric mixer, set up to medium speed.
Pour the mix into the crusts.
Bake in preheated oven at 350 °F (175 °C) for 50 minutes.
To garnish, use colored fruits (e.g., strawberry, kiwi, blueberry) on the cheese cakes and cover with Knox gelatin.
